Cauliflower and red lentils stew! A warm and healthy choice!

Nutritional information per serving: 343 kcal, 6 g fat, 55 g carbohydrates, 14 g protein

Ingredients for 6 servings:

  • 500 g vegetable mix cauliflower, broccoli and carrots (deep frozen)
  • 150 g red lentils, dry
  • 4 potatoes, diced
  • 2 onions, diced
  • 2 garlic cloves, diced
  • 2 tbsp olive oil
  • 2 tblsp tomato paste
  • 2 tsp thyme
  • 2 tsp curry powder
  • 1 tsp turmeric
  • 1.5 L of water
  • 4 tsp. granulated vegetable stock
  • salt, pepper

Preparation:

Heat the olive oil in a large saucepan.

Add the vegetable mix, the potatoes, the onions, the garlic and the red lentils in succession.

Fill up with the vegetable stock and stir.

Add the spices and the tomato puree one after the other and season with salt and pepper.

Stir and simmer for about 20 – 25 minutes.

Stir occasionally.
