It is still hot everywhere in Germany, everyone is waiting for a little cooling!

I brought you today a recipe for zucchini, which comes from Naples, Italy, where I have my origins. This dish is eaten in the summer! Perfect for hot summer days!

The Zucchini Scapece means that the zucchini are marinated in balsamic vinegar, olive oil, and garlic. You can serve them warm as well cold!

Nutritional information for 1 serving: 81 calories, 5 g fat, 5 g carbohydrates, 3 g protein

Ingredients for 4 servings:

  • 500 g zucchini in slices
  • 2 cloves of garlic
  • 1 tbsp olive oil
  • 1 tbsp Balsamic vinegar
  • Salt
  • 10 peppermint leaves

Directions

  1. Wash the zucchini, cap the ends and cut into thin slices.
  2. Peel the garlic cloves and cut into thin slices.
  3. Lay out a baking tray with parchment paper and spread the zucchini slices on top. Cook in the oven at about 220 ° C for 15 minutes.
  4. Now remove the zucchini slices and place in a bowl. Season with salt, a few garlic slices and peppermint leaves, add a dash of balsamic vinegar and olive oil and stir well.
  5. Serve warm or cold!
